Chow Mein + Almond Jello

Today I have an easy weeknight recipe to share with you! My hubby loves Panda Express Chow Mein, so I decided to give it a go and make my own healthier version and it turned out AMAZING! My husband loved it and even told me he didn't know he'd married a chef! ;)
HOMEMADE CHOW MEIN
Ingredients
1/4 cup soy sauce
1 tablespoon brown sugar
2 tsp minced garlic
1 teaspoon fresh ginger grated
1 2/3 cup boiling water
2 envelopes (.25 oz each) plain gelatin (I use Knox)
1/2 cup granulated sugar
4 tsp pure almond extract
1/2 cup cold whole milk
Optional: Lycheese, mandarin oranges, mangoes, or your favorite tropical fruits
Instructions
1. Pour boiling water into a bowl and whisk in the gelatin to fully dissolve.

1-2 tsp sesame oil (optional)
ground black pepper to taste
2-3 tablespoons vegetable oil
2 packages refrigerated Yaki Soba or stir fry noodles
2/3 cup chopped celery chopped diagonally
1 medium-sized onion thinly sliced
2 cups chopped cabbage
1. In a small bowl combine soy sauce, brown sugar, garlic, ginger, sesame oil and black pepper. Set aside.

2/3 cup chopped celery chopped diagonally
1 medium-sized onion thinly sliced
2 cups chopped cabbage
Instructions
1. In a small bowl combine soy sauce, brown sugar, garlic, ginger, sesame oil and black pepper. Set aside.
2. Remove Yaki Soba from packages and discard included flavoring packets. Rinse noodles well, drain, and set aside.
3. Heat oil in a large wok or skillet.
4. Add celery and onion and saute for about 1-2 minutes or until onions start to become soft and transparent.
5. Add cabbage and saute an additional minute or so.

6. Toss Yaki Soba noodles and soy sauce mixture with the vegetables over medium-high heat for an additional 2-3 minutes or until noodles are heated through.
7. Enjoy!
You can serve this as a side dish to some type of protein. We had our Chow Mein with Costco wild caught salmon. It was super easy + delicious!

This recipe brings me back to childhood. This dessert is so easy, you can have your kids help you make it! As a child, my job was to make the Almond Jello for our family parties, that and Raspberry Jello (another amazing family recipe that I will have to share when I make it next). This dessert is so easy, delicious + refreshing. It would be good any time of year but especially Spring + Summer.

2. Add sugar and gently hand-whisk to dissolve. Add almond extract and whisk. Add milk and whisk.
3. Pour into an 8×8 or similar sized dish. Chill 2-3 hours or longer.
4. When completely set, cut into squares and serve with your favorite fruit. I love it with canned mandarin oranges because that's how I ate it as a kid but you could also use lychees, ripe mangoes or enjoy it on its own!
