Kardashian Inspired Chinese Chicken Salad

Hi loves, today I have a Keeping Up With the Kardashians inspired Chinese Chicken Salad recipe to share that's perfect for hot Summer weather. A couple weeks ago I was binge watching old episodes of the Kardashians and and it got me craving Chinese Chicken Salad. The Kardashians are always eating salad and iced tea. I have already made this recipe a handful of times since then. This salad is perfect as meal prep for busy mommas and papas and whoever enjoys quick + easy fresh food. I prepped my veggies, chicken and salad dressing in separate bowls and ate this all week for lunch and dinner. Clean, healthy and fresh, I know you will love this recipe too!

INGREDIENTS

THE SALAD MIXTURE:
3 cups shredded organic romaine lettuce
3 cups shredded organic green cabbage
1 cup shredded organic purple cabbage
1 cup grated organic carrots
2 organic green onions, sliced
1/2 cup fresh organic cilantro, minced

TOPPINGS:
1–2 cups shredded cooked organic chicken
1–2 cups mandarin oranges (I buy the 100% juice-packed ones)
1/4–1/2 cup toasted almonds or cashews (optional-I usually don't add nuts)
*Last time I made this I added avocado and cherry tomatoes instead of mandarin oranges and the salad was just as yummy if not better. 

THE DRESSING:
1/4 cup organic coconut aminos or soy sauce
1/4 cup organic rice vinegar or cider vinegar for paleo
2–3 Tbsp olive oil (or avocado oil)
1/2 tsp sesame oil

INSTRUCTIONS
Combine the salad mixture and toss until well blended.
Whisk together salad dressing ingredients until well blended.
If serving the whole salad immediately, stir in the salad add-ins (chicken, oranges, almonds) and enough dressing to coat the salad. Don't add too much dressing at the beginning, as it breaks down the salad after a few minutes.
Serve immediately or keep components separate and prepare just as much as you need. If stored separately, leftovers should keep 3-4 days in the refrigerator.
