Healthy Low Sugar Toddler Banana Muffins


Hello there!

I know it's been a minute since I've posted. I'm sorry! We had family visiting from out of town and I have also been taking some time to enjoy spending time with Summer and being a mom. Now that Summer is 18 months old, I feel the need to slow down and enjoy her being this little. It makes me so sad to think she won't always be this little and we may not always be a family of three. Since she's been born we've always talked about having another baby. We thought we would try to have our kids as close as possible but as reality of caring for a baby set in we quickly decided to wait a little longer but it's always been on our minds. And honestly I feel guilty for always thinking about the next baby. I feel so blessed to have Summer and so I've been just trying to focus on her right now. One of the things that Summer and I have been up to lately is baking!

My love of baking started while I was pregnant because I wanted to eat cleaner and healthier. I continued to experiment with baking postpartum just for fun since I found it really hard leave the house (especially with a clingy baby!). It was something fun for me to do at home.  Most recently Summer & I have started baking together and it has been SO much fun! But also stressful and messy if I'm totally honest! Oh well, we love it anyway! I feel like she gets to learn so much from mixing, measuring, following directions and helping me. She loves to help me around the house so it's perfect for us to do together as a family (my husband also loves it!).

This week we made a delicious recipe that I am excited to share with you. We made a double batch and made 24 mini muffins and two small loaves of Banana Bread. You could easily make all muffins or loaves instead, up to you! The mini muffins turned out adorable and are perfect for little toddlers but again you could also use this recipe to make loaves or regular sized muffins.

Healthy Low Sugar Toddler Banana Muffins

INGREDIENTS
⅓ cup melted organic coconut oil
½ cup organic maple syrup (or honey-we used maple syrup)
2 eggs
1 cup mashed ripe bananas (about 2 ½ medium or 2 large bananas)
¼ cup milk of choice or water
1 teaspoon baking soda
1 teaspoon vanilla extract
½ teaspoon salt
½ teaspoon ground cinnamon, plus more to swirl on top
1 ¾ cups organic all purpose flour or whole wheat flour
Optional: ½ cup mix-ins like chopped walnuts or pecans, chocolate chips, raisins, chopped dried fruit, fresh banana slices. We topped ours with a sprinkle of oatmeal and one chocolate chip on half of the mini muffins.

INSTRUCTIONS
Preheat oven to 325 degrees Fahrenheit and prepare mini muffin tin and liners. We like to use silicone liners.
In a large bowl, beat the oil and honey together with a whisk. Add the eggs and beat well, then whisk in the mashed bananas and milk.
Add the baking soda, vanilla, salt and cinnamon, and whisk to blend. Lastly, switch to a big spoon and stir in the flour, just until combined.
If you’re adding any additional mix-ins, gently fold them in now.
Spoon the batter into your mini muffin tin and sprinkle lightly with oatmeal and top with chocolate chips.
Bake for 10-12 minutes, or until a toothpick inserted into the center comes out clean. Transfer it to a wire rack to cool.
